Spinach Pie

This recipe was on the Kraft website. I changed things around a bit.  We really enjoyed this one.  It is perfect for our effort to have at least one meatless night a week.

1 container (16 oz.) Low Fat Cottage Cheese

1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained

1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese

4 eggs, lightly beaten

1/3 cup Grated Parmesan Cheese

1/2 tsp. dried oregano leaves

1/2 tsp. garlic powder

1/2 tsp. basil

Mix all ingredients until well blended. POUR into greased 9-inch pie plate. BAKE at 350 degrees for 40 min. or until center is set.

Light Oat Bread- Breadmaker

A good white bread.

1 1/4 cups water

2 tablespoons margarine

1 teaspoon salt

3 cups all-purpose flour

1/2 cup rolled oats

2 tablespoons brown sugar

1 1/2 teaspoons active dry yeast

Add ingredients in order listed by your breadmaker.  Use the regular light setting.

Rosemary Bread- Breadmaker

  • 1 cup water
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons white sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon dried rosemary
  • 2 1/2 cups bread flour
  • 1 1/2 teaspoons active dry yeast

Place ingredients into pan on white bread cycle.
